    The Dietary Aide performs a variety of tasks in the kitchen, and dish room.  She/he is responsible for setting trays accurately, cleanliness of the work area, and the safe and sanitary handling of food, equipment, and supplies.  The Dietary Aide also prepares and stocks all other departments with appropriate supplies and food.



    1. Prepares and serves food for patients, staff and special functions.


    1. Prepares food in a timely manner insuring that patients are served as scheduled.
    2. Retrieves patient name and room number from daily roster.
    3. Prepares, garnishes, and serves food in an attractive manner.
    4. Follows standardized recipes, making only appropriate and/or approved substitutes.
    5. Utilizes production records to prepare hot food items in sufficient quantity to cover service requirements and reduce waste.
    6. Adheres to the cleaning schedule and insures that fellow employees do the same.


    1. Prepares and understands the modified diet requirements.


    1. Follows supervisor’s and dietitian’s orders for special modified diets.
    2. Prepares and serves appropriate foods.
    3. Competent and required to provide dietary services related to the following age groups: adult, and geriatrics.


    1. Utilizes proper safety and sanitation techniques.


    1. Obtains and records temperatures according to departmental policy.
    2. Utilizes gloves during direct hand/food contact 100 percent of the time.
    3. Maintains equipment utilized in a clean, safe, and sanitized condition.
    4. Exercises proper storage and handling techniques for food, i.e. labels, dates, covers, “first-in” “first-out,” etc.
    5. Operates equipment safely.
    6. Assists in the washing and sanitation of dishes and work areas using the proper cleaning solutions and amounts as directed by departmental policies and procedures.
    7. Initiates work orders for equipment repair.
    8. Reports all accidents to the Dietary Manager immediately.
    9. Practices proper containment and disposal or garbage as directed by departmental procedures.


    1. Understands the Dietary Aide’s position in relation to other dietary staff positions.


    1. Follow the instructions of the Cook.
    2. Standardizes and incorporates new recipes into the menu cycle.
    3. Assists the purchaser in routine weekly food orders.




    1. Assembles prepared food and utensils. Functions on tray line during meal hours.


    1. Assembles silverware, condiments, and food items for tray line.
    2. Places items on tray line.
    3. Checks filled tray for accuracy against menu and dietary plans before tray leaves kitchen.
    4. Places filled tray on cart according to room number.
    5. Sweeps and mops floors on a daily basis.
    6. Adheres to the cleaning schedule.


    1. Assists in the washing and sanitation of dishes and work areas using the proper cleaning solutions and amounts as directed by departmental procedure.


    1. Removes and rinses dishes from returned trays.
    2. Loads dish racks for the dish washing machine and puts racks through dish mane. Washes hands from dirty dishes to clean dishes.
    3. Visually checks dishes for cleanliness and delivers clean dishes and utensils to proper kitchen units.
    4. Cleans and sterilizes work areas, tables, work cabinets, and coffee urns.


    1. Updates diet orders before meals.


    1. Retrieves patient name and room number.
    2. Checks for diet order changes before each meal and the delivery of food trays. Notes appropriate changes on tray cards.


    1. Completes required educational/skill validation annual reviews within the established time frame.


    1. Attends and actively participates in interdepartmental meetings. Actively participates by giving constructive input.


    1. Follows policies and procedures.


    Education/Certification:  Food handlers permit.


    Experience:  Previous experience working in food service





    Language/Communication:  Must have the ability to read, write and speak English.


    Mathematical Skills:  General mathematics


    Performance:   Job tasks should be completed in a timely manner.
